Quick Corn Relish

Corn is plentiful and sweet. Nothing beats a corn roast but there are other simple and delicious ways to use this versatile veggie. One of these is corn relish. It is delicious on hot dogs and hamburgers but there are other ways to use it as well. Corn relish makes a delicious condiment with poultry, pork or grilled fish. Fold in some sour cream or cream cheese and you have a delicious dip. Add it to salsa for extra zing. Thinking ahead, it would also make a great burst of color in a Xmas basket.

INGREDIENTS

    1 T flour½ t turmeric2 t dry mustard1 t salt or salt substitute½ t celery seed½ c apple cider vinegar½ c sugar¼ c finely chopped onion1 ¾ cooked fresh corn kernels1 T chopped pimento

METHOD

  • blend flour, turmeric, dry mustard, salt and celery seed
  • gradually blend in vinegar
  • stir in sugar and onion
  • cook, uncovered in 1 ½ quart casserole at 100% power for 3 minutes until mixture thickens, stirring twice during cooking
  • remove from microwave and stir in corn and pimento
  • pour in a glass jar, cover and store in fridge

Note: you can make large batches, seal in smaller jars and store for winter.
