Recipe: Sweet & Savoury Brie Tartlettes

Who says you can't improve on perfection? Brie is delicious. Brie mixed with caramelized onions, walnuts, dried fruit and honey spooned into mini tart shells is SUPER delicious. These crowd pleasing appetizers are dead easy to make. Warning: they go fast.

INGREDIENTS

  • 24 frozen mini tart shells (phyllo or pastry)
  • 6 oz brie cheese, cut into 1-inch cubes
  • 1 large yellow onion
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • pinch of sea salt
  • 2 teaspoons butter
  • 1/4 cup chopped walnuts (or nut of your choosing)
  • 1/4 cup chopped dry fruit (apricots, figs, cranberries, dates - whatever you fancy)
  • 1 tablespoon honey
  • 2 tablespoons fresh chopped rosemary

METHOD

Caramelize your onions. Heat the olive oil over medium heat in a large pan. Slice the onion in thin rings and add to the pan. Reduce heat to low and cook the onions for 20-25 minutes or until soft and golden brown—stirring frequently. Once you've reached the golden brown stage, add the balsamic vinegar and salt. Continue heating and stirring until the liquid cooks off. Remove from heat.

Preheat oven to 350. Place the frozen tart shells on a baking sheet and pop a cube of cheese in each shell. Fill the shells evenly with the caramelized onions and bake for 10-12 minutes or until the cheese has melted and the shells are slightly golden.

While the tarts are baking, heat butter and pecans in a small pan. Toast the nuts for 5-ish minutes or until they seem toasted—obviously, don't burn them! Spoon nuts onto the baked tarts, drizzle with honey and top with fresh rosemary just before serving. Please note, your kitchen will smell amazing and your guests/family/friends may profess undying love for you. Accept it. You deserve it!
