Roasted Grape Crostini

Roasted Grape Crostini

Does slow roasted Red Seedless Grapes with Walnuts and Goat Cheese sound appetizing? How about if we drizzled it with Honey? These Crostinis are sure to be a party favourite. Not to mention they are a great vegetarian option.

INGREDIENTS

  • 4 cups of Red Seedless Grapes
  • 1/2 cup of Goat Cheese
  • 2 Tablespoons of Honey
  • 1/4 cup of chopped and toasted Walnuts
  • 1 large Baguette sliced thin
  • 1 Tablespoon of Olive Oil
  • 1 Tablespoon of Balsamic Vinegar
  • Salt and fresh Ground Pepper to taste
  • Chopped Thyme Leaves for garnish

METHOD

Preheat oven to 325 degrees F. and line large baking dish with parchment paper.Stir together grapes, oil, salt and pepper in a medium to large bowl.Spread mixture on parchment paper. Roast for 45-50 minutes. Stirring occasionally until they are caramelized and wrinkled.Remove grapes and drizzle Balsamic Vinegar and stir to coat.Spread goat cheese on Baguette, top with Grape mixture and walnuts.
