Sweet glorious mangoes! A bit messy to eat, until you get the hang of cutting them properly, this wonderful fruit lends itself to a perfect smoothie. The addition of coconut to this recipe makes for a tropical tasting treat. And it only takes a few minutes to make!

 

INGREDIENTS
2 cups fresh mango
1/2 cup coconut milk
1/4 cup coconut cream
1 tablespoon maple syrup
1 teaspoon freshly grated ginger
1 scoop of protein or collagen powder (optional)

METHOD
In a high speed blender, combine the mango, coconut milk, coconut cream, maple syrup, ginger and powder (if using) and blend on high until completely smooth. Blending with crushed ice is perfect for hot summer days! You can also use this mixture to pour into popsicle moulds for a healthy and tasty frozen treat.
