Summer Sensation: Grilled Watermelon

Yes, really. You can totally grill watermelon. A quick sear on each side caramelizes the natural sugars in the watermelon and creates a completely unique flavour. Offset the sweetness with a bit of sea salt and you have yourself a refreshing dessert or an interesting canapé.

INGREDIENTS

  • 1/2 seedless watermelon cut into 1-inch wedges
  • 2 tablespoons extra-virgin olive oil or avocado oil
  • 1/4 teaspoon coarse sea salt, plus more for garnish as needed

  • METHOD

    Heat the grill to medium-high.Brush both sides of the watermelon with oil and sprinkle lightly with salt.Grill the watermelon slices about one minute/side or until slightly caramelized, flipping once.Transfer to a serving dish, sprinkle with more sea salt. Add various spices to suit your taste. Try some of these combinations:

    • rosemary & feta
    • basil & bocconcini
    • guacamole & cilantro
    • honey & cardamom
    • vanilla ice cream 0r yogurt
