Almond Flour Drop Biscuits

Whether you're eating a low-carb diet or looking for a high-protein snack, these easy to make biscuits hit the spot. Add herbs and spices to change the flavour!

INGREDIENTS

2 cup of fine ground almond flour2 large eggs (room temp)1/3 cup of melted butter1/4 cup full fat Greek yogurt or sour cream1 teaspoon baking powder1/2 teaspoon sea saltherbs/spices/shredded cheese (optional) **

METHOD

Preheat oven to 350 degrees. Line a baking sheet with parchment paper.

Mix the almond flour, baking powder, and salt together in a mixing bowl. In a smaller bowl, whisk the eggs into the yogurt or sour cream. Add the melted butter to the wet ingredients and whisk until combined,

Stir the wet ingredients into the dry ingredients. Add herbs and/or spices, if you're using any, and mix well.

Scoop batter onto a parchment paper-lined baking sheet. If you use a regular sized ice cream scoop, you'll get 10-12 biscuits.

Lightly tap the top of the mounds of batter with your fingertips to make a nice biscuit shape.

Bake biscuits for 15 minutes or until lightly golden. Allow the biscuits to cool on the pan & store in an airtight container. Biscuits are fine at room temperature for several days.

Note:You can add up to 1/2 cup of shredded cheese to this recipe. 1/4 cup of currents, raisins or other dried fruit works well, too!
