Father's Day French Toast

Pancakes are great, but do flapjacks use of leftover bread AND taste delicious? No, no they do not. French toast is simple to make and it's a great way for kids to get involved in making something special for dad.

INGREDIENTS

8 x 1″ thick slices of your favourite bread. Challah is excellent for this.6 large eggs, room temperature1 1/2 c. whole milk1 1/2 tsp. ground cinnamon1 1/2 tsp. pure vanilla extract 4 tbsp. unsalted butter

METHOD

Whisk together eggs, milk, cinnamon, and vanilla in a large, shallow bowl. A casserole dish works well.

Place 2 bread slices in egg mixture and let soak for a couple of minutes. Flip and soak 1 minute more. Both sides should be coated evenly.

Heat 1 tablespoon butter in large nonstick skillet on low heat. Once melted increase heat to medium-low and add bread slices, cooking 1 to 2 minutes per side or until golden brown; transfer to wire rack. Working in batches, soak the next slices of bread while you’re cooking and repeat.

Serve with butter, syrup and fresh fruit.
