Whether you are putting together a backyard BBQ on Vancouver Island or in Santorini a fresh Greek Salad is always a good choice!

  • 2 heads of Romaine Lettuce
  • 2 large Tomatoes
  • 1 large Cucumber
  • 1 Red Onion
  • 1 cup Black Olives
  • 1 large Lemon
  • 1/2 pound of Feta Cheese
  • 3/4 cup of Olive Oil
  • 2 tablespoons of Red Wine Vinegar
  • 2 teaspoons of Dried Oregano
  • 2 teaspoons of Minced Garlic
  • 1 teaspoon of Dried Basil
  • 1 teaspoon of Sugar
  • Salt and Pepper to taste

Blend together olive oil, garlic, oregano, basil, salt, pepper and the juice of one large lemon in a food processor or magic bullet until smooth.

Next, chop up all remaining produce and combine with crumbled feta cheese.

Drizzle dressing over produce and toss to coat.
