Homemade Guacamole

Guacamole is a dip made from avocados and is originally from Mexico. A friend from Mexico gave me this recipe and it's delicious! The secret to a perfect guacamole is using the right avocados. In order to know if and avocado is ripe enough you can gently press the outside of the avocado, if there is no give, that means the avocado is not ripe yet and you will not get a good taste. If there is a lot of give, the avocado could be way too ripe. In the end is all about finding the right give. No worries if you don't get it the first time, every Guacamole expert has had to throw away at least one avocado.

INGREDIENTS

  • 4 ripe, fresh Hass avocados, seeded, peeled, cut in chunks
  • 1 Tbsp. lemon juice
  • 2 small white onion, minced
  • 1 ripe Roma tomato, minced
  • tablespoons cilantro (leaves and tender stems), finely chopped
  • 1 teaspoon salt
  • A dash of black pepper

METHOD

  1. Mash avocados with lemon juice in a bowl, leaving some chunks.
  2. Gently stir in remaining ingredients and serve immediately.

Serving Suggestions:

Serve with tortilla chips. It is recommended that if you will not eat it immediately you should cover it up in order to prevent prevent air reaching it. (The oxygen in the air causes oxidation which will turn the guacamole brown.) Keep it in the fridge before serving it.
