Of course there are many ways to prepare asparagus. Everyone has their favourite method, but roasting is probably one of the simplest and tasty ways to go. Really, you just pop them in the oven.
Choose the freshest asparagus you can find. Thin spears will be milder, while thicker ones have a stronger flavour.
Snap off the dry woody ends and discard or save for making soup later.
Preheat the oven to 425°F. Put rack in top of the oven.
Spread the asparagus in a single layer on a baking sheet and drizzle with olive or avocado oil.
Season generously with salt & pepper and add a little lemon, if you like.
Roast on top rack in the oven for 15-20 minutes or until desired tenderness is reached. Remove from oven and top with shaved parmesan while still warm.
