Fresh tasting super foods come together in this lovely crunchy salad. The sweetness of the apples and cranberries is nicely balanced with the Parmesan and poppy seed dressing. This recipe is very easy to whip up, especially if you’re using bagged kale and broccoli slaw. It keeps well in the fridge, so it’s great to make ahead or bring to a gathering.

INGREDIENTS

4 cups firmly packed shredded kale, finely chopped (bagged or chopped by hand)
3 cups broccoli slaw
1 large apple
1 teaspoon lemon juice (to keep the apples from browning)
1/2 cup store-bought poppy seed dressing
1/2 cup dried cranberries
1/4 cup grated Parmesan
1/4 cup pumpkin seeds (lightly toasted, to add flavour – optional)

METHOD

Dice the apple and place in a large bowl. Mix in lemon juice and add kale, broccoli slaw, and poppy seed dressing. Toss together until all ingredients are coated with dressing.

Sprinkle with dried cranberries, Parmesan, and pumpkin seeds just before serving.
