3 tablespoons tahini (sesame seed paste), well stirred
1 tablespoon lemon juice
1/4 teaspoon crushed fresh garlic
1/8 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
3 tablespoons warm water
Combine tahini, lemon juice, garlic, salt, and pepper in a bowl.
Whisk in the water, 1 tablespoon at a time, until you reach the constancy you prefer for salad dressing. Store in an airtight container.
