Blueberries make a lovely addition to summer salads and work particularly well with chicken, adding a hint of sweetness and texture.
- 2 cups fresh blueberries
- 2 cups cubed or shredded cooked chicken breast
- 1/4 cup chopped celery
- 1/4 cup thinly sliced & chopped fennel bulb
- 1/2 cup thinly sliced green onions
- 1/4 cup toasted, chopped walnuts (optional)
- 1/2 cup plain yogurt
- 1 teaspoon lemon juice
- 2 tablespoons mayonnaise
- salt & pepper to taste
Set aside a handful of blueberries along with toasted walnuts (if using) for topping.
In a bowl, gently toss chicken, celery, fennel, green onions and blueberries. In a small bowl, mix yogurt, mayonnaise, lemon juice, and seasoning. Pour over the chicken mixture and gently toss again until the everything’s coated. If the salad seems dry, add a little more mayo or yogurt.
Keep in the fridge until serving. Top with blueberries and toasted walnuts.
