Perfect for a light lunch or snack, these Mini Cucumber & Hummus Wraps are refreshing, nutritious, and incredibly easy to make! Using fresh ingredients, this recipe is great if you're looking for a quick and healthy meal.
INGREDIENTS
2-3 B.C. mini cucumbers
4-6 large tortillas (whole wheat or your choice)
1 cup hummus (homemade or store bought)
1 red bell pepper, thinly sliced
1/4 red onion, thinly sliced
1/4 cup fresh cilantro, chopped (optional)
Salt and pepper, to taste
A handful of spinach or mixed greens
1 tablespoon olive oil (optional, for extra richness)
METHOD
Prepare the cucumbers: Slice the cucumbers into thin rounds. Set aside.
Layer the ingredients: Spread a generous layer of hummus on each tortilla, leaving about an inch around the edges.
Assemble the wrap:
1) Add a handful of spinach or mixed greens over the hummus.
2) Layer the sliced cucumbers, bell pepper, and red onion on top.
3) Sprinkle chopped cilantro over the vegetables for a burst of flavour.
4) Season with a pinch of salt and pepper.
Roll it up: Fold the sides of the tortilla and roll it tightly into a wrap.
Optional: If desired, brush a little olive oil on the outside of the wraps and lightly grill them in a pan for extra flavor and texture.
Serve: Slice each wrap in half and serve immediately.
