Seared Broccoli

Looking for a tasty and unique way to serve broccoli? Searing the florets and seasoning with a bit of lemon and salt elevates this fabulous green veggie—perfect for dinner parties.

INGREDIENTS

  • 2 large heads broccoli, cut into medium florets (about 7 cups)
  • 2 tbsp. olive oil, plus more as needed
  • 1 tbsp. fresh lemon juice

METHOD

Halve the broccoli florets so that each has a flat side. Heat a large skillet over high heat and add 1 tablespoon olive oil and the florets (flat side down). You may need to cook in batches depending on the size of your pan. Press the florets with the lid of pan to help them sear on the cut side. Let cook until the florets have brightened and warmed through—approximately 4-5 minutes. The flat cut sides will be a bit charred and you want the broccoli to retain some of it's snap.Remove cooked broccoli and transfer to a warmed serving bowl. If you're cooking the broccoli in batches, continue to add enough olive oil to cook the remainder. Once all your broccoli is cooked and in the serving bowl, drizzle with an additional tablespoon of olive oil and fresh lemon juice. Season with salt to taste and serve immediately.
