Skillet Wieners & Beans

"Wienies & beans" or "beanie wienies" or "franks & beans"—whatever you want to call the dish—there's something deliciously comforting about wieners and canned beans. For some, it harkens back to campsite dinners. For some, it's the first meal they learned to make on their own. And if you've never tried it, you're in for a treat! It's undeniably tasty, economical and dead easy to make. This recipe gets a bit "fancy" with sauteed onion and fresh cracked pepper.

INGREDIENTS

  1. 2 (398 ml) cans pork and beans (drained)
  2. 1⁄3 cup chopped sweet onion
  3. 4 slices bacon, diced
  4. 1(450 g) package of your favourite hot dogs or smokies, cut into bite-sized pieces
  5. 1 tablespoon butter
  6. 2 tablespoons ketchup or BBQ sauce
  7. 1 tablespoon mustard (honey, yellow, dijon)
  8. 1⁄3 cup packed brown sugar
  9. freshly cracked pepper, to taste

METHOD

In a medium size skillet, melt butter heat over medium heat.

Add bacon and onion; sauté until onions are lightly browned and tender.

Add hot dogs; cook until most are lightly browned.

Add rest of ingredients, mixing well.

Reduce heat and simmer for 30 minutes or until slightly thickened.

Add pepper to taste and serve with thick slices of buttered toast.
